My German Macaroni Salad

Ingredients

 1 box (12 oz) elbow macaroni

1 ham steak

8 oz block cheddar, cubed 

1 medium red onion, diced

1 cup mayonnaise

4 tablespoons evaporated milk

1 package dry italian dressing/seasoning mix

1 cup water

1 tablespoon olive oil 

salt and pepper to taste

Instructions 

Cook the macaroni according to package directions. After the pasta has finished cooking drain and rinse for a few second with cold water. While the pasta is cooling off put in a large bowl. Set aside. In a small bowl combine the italian dressing envelope with water according to the package directions. Then add the dressing mixture to the still warm pasta and stir. Add the onion and the olive oil. Stir again until well combined. Let stie and put aside until the pasta is cooled off. Add the milk to the mayonnaise (it should have a slightly runny consistency) and after the pasta has cooled off add the mayo/milk mixture. Only add as much as you like. Some like their macaroni salad more “mayonnaisy” than others. Stir in the cubed ham and the cubed cheddar as well. Mix until well combined. If needed add pepper and salt to taste. I usually reserve some of the mayo/milk mixture to add for later as the macaroni will soak up part of it. Chill.

  1. I’m happy to be the first reviewer of this recipe and report that I enjoyed it and recommend it. I needed something to accompany our dinner and this was good, filling and simple.

  2. I find that often it’s the non-fussy recipes, that are the best. This was exactly what I had in mind for our dinner tonight.
