Immersion Blender Hollandaise

Ingredients

4 egg yolks

2-3 teaspoons fresh lemon juice ( depending on your taster a little more or less)

1/2 teaspoon dijon mustard

1/2 cup melted butter

red pepper flakes to taste

salt to taste

Directions

Combine the egg yolks, lemon juice, mustard and red pepper flakes in a medium size mason jar. Blend until combined – just a few seconds should do the trick. With the immersion blender running pour the butter into the egg yolk mixture in a thin stream. I found that this worked perfectly if I poured the butter near the openings of the immersion blender blades. Continue to pour slowly until the mixture thickens. As the sauce forms lightly raise your blender so the newly added butter can be incorporated as well. When all the butter has been added taste and if necessary add more lemon juice or heat to your liking.
