Roasted Veggies

 Ingredients

2 tablespoons olive oil

salt and pepper to taste

1 tablespoon onion powder

2 cups broccoli florets

2 cups cauliflower florets

1 large red onion – halved and then sliced

1 1/2  cup carrots cut into 1 inch pieces

1 cups white mushrooms sliced

1 cup red peppers, cut into 1-inch strips

2 cloves garlic, sliced

Directions

Preheat oven to 425 degrees. Place your prepared vegetables in a big enough storage or freezer bag. Add the olive oil and seasoning. Close the bag and shake until well combined. Empty the bag onto your baking sheet and bake the vegetables in the oven for about 15 minutes. Stir to mix them up a bit. Then bake for another 15 – 20 minutes or until the vegetables are tender. Enjoy !
