Perfectly Roasted Chicken

Total Time: about 2 hours 20 minutes (cooking time varies based on the weight of the chicken) – yield 5-6 servings

Ingredients:

1 (6 lb) chicken / oven roaster

2 tablespoons softened butter

2 ½ teaspoons of Zatarains Blackened Seasoning  – please note that even though it is one of my favorites you can use any other seasoning if you prefer

Directions:

Preheat oven to 400 degrees F. Remove Chicken from package and rinse under cold running water. Make sure to remove the gizzards that are in the cavity. Dry the chicken with paper towels inside and out. Rub the skin with butter and then season the chicken liberally inside and out with the blackening seasoning. Place in a (disposable) roasting pan. Move the pan to the oven – middle rack. Reduce the heat to 375 degrees Fahrenheit. Roast the chicken for 45 minutes. Baste with the pan juices. Continue roasting for an additional 45 minutes or until the chicken reaches an internal temperature of 165 degrees.
