Creamy Celery Soup

Ingredients

2 tablespoons butter

1 medium onion – chopped

7 cups of chopped celery ( I used 2 hearts of celery) – reserve some of the leafs and chop them up for garnish

Salt and pepper to taste

1 teaspoon onion powder

½ cup evaporate milk

5 cups of vegetable or chicken broth

optional – red pepper flakes

Directions

Melt the butter over medium heat in a sauce pan. Add the onion and celery and cook until tender. Do not brown the mixture. Stir while cooking. Add the vegetable or chicken broth and bring to a simmer. Simmer for about 15-20 minutes. Remove from heat. With a stick blender puree the soup until smooth and no longer chunky. Add the evaporated milk, season with salt, pepper and onion powder and the optional red pepper flakes. Return to heat until hot.

  1. I wasn’t sure how to feel about this when I read the recipe but I wanted to make a soup from scratch so I decided to try it. This was delicious ! And easy ! Did I mention that this was really delicious ?
