Instant Pot Mongolian Beef with Green Beans  

Total Time: 30 minutes                     Yield : 6 servings

Ingredients

2 pounds round steak, cut into ½ inch strips

1 tablespoon extra light olive oil

salt and pepper to taste

2 gloves of garlic, minced

½ teaspoon red pepper flakes

¾ cup light soy sauce

¾ cup water

2/3  cup light brown sugar

1 teaspoon fresh ginger, minced

1 teaspoon onion powder

1 pound fresh green beans

2 tablespoons cornstarch

6 tablespoons water


Directions

Season the beef strips with salt and pepper. Set the instant pot to “Sauté” and allow the oil to heat up. When the oil is hot add some the beef strips and brown on all sides. Remove the meat and place on a plate or in a bowl. Repeat until all the meat has been browned. Make sure not to overcrowd the meat when sautéing or the meat will not brown properly. After all the meat has been browned add the minced garlic and sauté for a minute. Stir. Add the meat back into the instant pot. After the meat has been added back pour the soy sauce, ¾ cup water, ginger and brown sugar to the pot. Stir. Select “Pressure Cook”, “Pressure Level High” and set the timer to 12  minutes. After 12 minutes, when the timer goes off use the quick release. When all the pressure has been released and the valve drops, carefully remove the lid. Add the green beans to the instant pot and again select “Pressure Cook”, “Pressure Level Low”. Set the timer for 2 minutes. When the timer goes off use the quick release. After the valve has dropped remove the lid carefully. Combine the cornstarch with the rest of the water and add to the instant pot. Select “Sauté “ and stir until the sauce has thickened. This step should only take about a minute or two.
