Pecan Smoked Scallops

Total Time: 1 hour 30 minutes Yield : approximately 4 servings

Ingredients

1 pound scallops

salt and pepper ( to taste)

1/2 teaspoon paprika

2 tablespoons melted butter

Directions

After removing the scallops from the package make sure to dry both sides with a paper towel. Remove the little half moon looking muscle on the outside then season the scallops with salt, pepper and paprika. Put the seasoned scallops in a bowl or plastic bag with 1 teaspoon of avocado oil and let marinade in the refrigerator for an hour or so. Preheat your smoker to 225°F. Once your smoker is preheated remove the seasoned scallops from the refrigerator. Move them on to a grill type grate so that they don’t fall through. Add Pecan Wood to your smoker. I only use about a handful for these as I don’t like them too smoky. The vent on your smoker should be all the way open to allow proper air flow. Smoke the scallops for about 30 minutes or until they reach an internal temperature of 135°F. They should be opaque inside. Just before serving drizzle with melted butter. I like to add freshly ground pepper as well.
