My Favorite Yam Casserole

Ingredients

4 pounds yams

2 eggs

¼  cup maple syrup

¼ teaspoon cinnamon

¼ cup brown sugar

Topping 

¾  cup brown sugar

¾ cup room temperature butter

¾ cup flour

Directions

Preheat oven to 375 degrees F. Wash the yams then prick them with a fork and put on a foil lined baking sheet. Bake in the oven for about 45 minutes or until tender. Let cool for a bit. When cooled off enough to handle, scoop the yams out of the skin into a large bowl. Add the brown sugar, maple syrup and cinnamon and beat with a hand mixer mix until smooth. Add 1 egg at time , beating after each addition and until mixture is light and fluffy. Grease a 9×13 baking dish and add the mixture to the dish.

In a small bowl mix the brown sugar, butter and flour until well combined. Sprinkle this mixture evenly on top of the yams. Bake in the pre heated oven for about 35 minutes or until lightly browned.
