Dirty Rice

Ingredients

6 cups cooked rice
1 large onion, chopped
3 celery stalks, chopped
1 red pepper, chopped
1 jalapeño pepper, chopped (leave the seeds if you love heat; remove the seeds if you prefer it milder)
1 clove of garlic, chopped
1 pound ground beef
1 pound chicken livers, chopped
2 teaspoons creole seasoning
1 teaspoon onion powder
salt and pepper to taste
2 – 3 cups beef bouillon

Directions

In a large sauce pan sauté the onions, celery, garlic and peppers over medium heat until softened. Add the ground beef and the chicken livers. Stir and continue to stir cook until no longer pink. Making sure to break up the ground beef into crumbles when stirring. Add 1 cup of beef bouillon, scrape the bottom of the pan and let the mixture cook down for 3-4 minutes. Then add the rice and stir again until all the ingredients are well combined. Add one more cup of beef bouillon, stir and cook until the rice absorbed most of the liquid and is nice and hot. If needed add half cup of beef bouillon.
