Smoked Shrimp

We really like Shrimp. Shrimp Cocktail is one of our favorites. Perfect with my daughter’s awesome Cocktail Sauce. After I bought some Shrimp I couldn’t decide between Shrimp Cocktail or my Ranchy Roasted Shrimp . I knew I was looking for easy and quick. I had a very serious decision to make. How to prepare my Shrimp. Ha ! You think your life is hard. Decisions, Decisions 😊. Hmmm, what’s a girl to do ? To add to my dilemma I then decided that I really wanted to use my smoker. Talking about being all over the place. That’s so me these days. I finally decided to try something new ( for me). I figured why not try to smoke the Shrimp ? Even though I’ve never eaten smoked Shrimp I went for it. The worst thing that could possibly happen would be that we didn’t like it. Been there, done that. Hahaha. Come to find out it was not something I needed to worry about. Oh man ! The Shrimp were so very good ! Perfectly cooked. And they took less than an hour in my smoker at 225 degrees. A quick dinner that can easily be made during the week after work. I love that about my Masterbuilt Electric Smoker. It doesn’t take much preparation. Plug it in, add the wood chips and you are good to go. Back to the Shrimp though. Since the Shrimp could fall through the racks I use a 9×13 aluminum pan to make life easy. You can either use my My BBQ Rub or Lemon Pepper seasoning. Both will taste great. Feel free to be adventurous and prep half the shrimp with the BBQ Rub and the other half with the Lemon Pepper. Just use two 8×8 aluminum pans instead of a 9×13. It’s up to you.  Whatever you are in the mood for that day. Both are delicious. You decide which one you like best. The Shrimp tasted awesome warm but even the leftovers were delicious the next day for lunch. You can easily eat these smoked shrimp plain, dip them in a cocktail or dipping sauce, on top of salad, make shrimp tacos and so on. So many choices. This is one of these easy, quick, delicious recipes that will impress whoever you serve this to. Everybody always talks and brags about making Brisket. I have to be honest and tell you there are so many other recipes that are much quicker, easier and oh so very good. I hope you try this recipe and love it as much as we do. Enjoy !

 

 

Smoked Shrimp

 

Ingredients

1 pound jumbo shrimp, tail on, shelled and deveined

2 tablespoons olive oil

1 ½ teaspoons bbq rub or lemon pepper seasoning

 

Directions

Pre-heat the smoker to 225° F. Add the shrimp, olive oil and lemon pepper or other seasoning to a large ziploc bag. Close the bag and gently shake and mix up until the seasoning is evenly distributed. You can do this in a large bowl as well. I find using a Ziploc bag keeps the dishes and the clean up to a minimum. Remove the shrimp from the bag and add to a 9×13 aluminum pan. Make sure the shrimp don’t lay on top of each other. They should be in a single layer. Put the container with the shrimp in the smoker. Add a handful of fruit wood chips of your choice. Apple and Cherry are usually my go to. Make sure that your smoker vent is about ¾ open. After 15 minutes stir the shrimp. Close the door and wait an additional 10 minutes. Stir the shrimp again. Smoke until the shrimp turn pink. Total cook time will take 40 to 60 minutes. Make sure you keep an eye on your shrimp. Once they turn pink remove them from the smoker. If you over cook them they will turn rubbery.
