Smoked Bologna

Ingredients

3 pound chub of Bologna

2 tablespoons yellow mustard

3 tablespoons Sazon con Todo or your favorite bbq rub

Directions

Preheat your smoker to smoker to 225°F. Fill the water pan with a (cheap) can of beer. I like using hickory wood chips for this recipe but if you prefer you can use Pecan or Beech as well. Make sure that the vent on the smoker is ¾ open. While the smoker is heating up prepare the bologna. Score the bologna about ¼ inch deep into a square or diamond pattern. Brush the entire log with yellow mustard. Then coat the entire roll with the Sazon Con Todo seasoning or the bbq rib rub. Place the bologna directly on the middle rack of the preheated smoker. Smoke for about 4 hours – refilling the wood chips every 45 minutes. Remove the bologna from the smoker and let cool. Enjoy sliced bologna on a Sandwich or cut into chunks dipped in your favorite bbq sauce.
