Cheesy Ham, Mushroom and Onion Squares

Ingredients

1 package puff pastry sheets, thawed

1 cup shredded monterey jack cheese

1 small onion, finely diced

1 tablespoon butter

¾ pound cooked ham, finely diced

½ cup canned mushroom, finely diced

½ cup prepared ranch dressing

Directions

Sauté the onion in butter until translucent. Let onion cool. In a medium size bowl mix the onion, ham, mushroom, cheese and ranch dressing. Heat oven to 400 F. Unfold 1 pastry sheet. With a rolling pin, roll out the sheet until it is about 12×12 inches. Cut the sheet into 36 2×2 inch squares. Prick the squares with a fork and place on a baking sheet that has been lined with parchment paper. You can also use a disposable cookie sheet for easy clean up. Add a teaspoon of ham, mushroom, onion and cheese mixture to the top of each square. Unroll the 2nd puff pastry sheet and roll into another 12×12 inch square. Cut into 2×2 inch squares. Transfer to a cookie sheet, prick with a fork and top with the ham and cheese mixture. Bake each batch for about 10 minutes or until golden brown.
