Delicious Zucchini Bread

Total Time: 1 hour 30 minutes   Yield: 2 loafs       

Ingredients

3 cups all purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon kosher salt

1 ½ tablespoons cinnamon

1 cup vegetable oil

3 eggs

1 cup white sugar

1 cup brown sugar

2 tablespoons vanilla extract

3 cups shredded zucchini (shred with skin on ; do not drain)

Directions

Preheat oven to 325 degrees F. Spray 2 8×4 loaf pans with non-stick cooking spray. In a medium size bowl combine the flour, baking soda, baking powder, salt and cinnamon. Beat the eggs, sugar, oil and vanilla with a hand mixer in another bowl until creamy for 4-5 minutes on medium speed.  Add the dry ingredients to the wet ingredients and beat until well combined. The dough will seem pretty dry. Add the grated zucchini ( do not drain)  to the batter and mix on medium speed until mixed in well. Divide the batter and pour into the 2 loaf pans. Bake for 50 minutes or until a toothpick inserted comes out clean. Cool in the pans for 30 minutes before removing.
