Smoked Cheesecake

Ingredients

Crust

2 ½ cups graham cracker crumbs

1/2 cup sugar

1/2 cup melted butter

Filling

4 (8 ounce) packages cream cheese, softened

1 cup sugar

1 teaspoon vanilla

1/2 cup sour cream

1 tablespoons all-purpose flour

3 large eggs, lightly beaten

Directions

Pre-heat smoker to 225 ° F. Lightly grease a 9x 13 aluminum pan. Mix the graham cracker crumbs, sugar and the melted butter. Press the mixture to the bottom of the aluminum pan, going up the sides about 2 inches. In a large bowl beat the cream cheese and sugar until smooth. Add the sour cream, vanilla and flour. Then add the eggs ( one at a time) on low-speed until blended. Pour the mixture over the crust. Place the aluminum pan into the pre-heated smoker. Open a can of beer and use that as the liquid that has to be added to your electric smoker. Using either apple, cherry or peach wood chips smoke the cheesecake for 2 hours. Remove from smoker. Cool the cheesecake. Refrigerate. Use a few graham cracker crumbs to sprinkle on top of each slice before serving.
