Fresh Salmon Patties

Ingredients

1 ½ pounds fresh salmon fillet, skin removed and cut into 4 or 5 pieces

1 egg

2 tablespoons minced red bell pepper

3 green onions, chopped

1/4 cup mayonnaise

1 teaspoon Dijon mustard

½ teaspoon red pepper flakes

salt and pepper to taste

½ teaspoon granulated garlic

1 teaspoon onion powder

1 tablespoons olive oil plus 1 tablespoon butter, for frying

Directions

Cut parchment paper into 6 approximately 5 inch x 5 inch pieces, sprayed with non-stick spray.

Cut the Salmon into pieces and pulse in your food processor a few times. The salmon should be ground but still have a few chunks. You don’t want it perfectly smooth. I usually pulse 5 or 6 times. It really depends or your food processor and the size of the salmon pieces you started with.

Add the Salmon to a large bowl and stir in all the other ingredients until well combined. Divide the mixture evenly and form into burger patties. After the patties have been formed put each one on the prepared piece of parchment paper. This will make it easier when you put the patties in the frying pan. Heat the olive oil and butter olive oil in a skillet over medium-heat. Add the patties (just put the parchment on your hand and gently flip the patties into the pan. You should end up with the parchment on top. Carefully remove / peel off the parchment and cook the patties until golden and cooked through, about 3 to 4 minutes per side.
