Mama’s German Fritatten Soup

Ingredients

1  32oz carton of your favorite broth or 4 cups of homemade broth or stock

1 ½ cups milk
1 cup of flour
3 eggs
1/2 teaspoon of salt  (or to taste)

optional – 2 t parsley or chives

oil for frying 

Directions

In a medium bowl mix the egg and milk until well combined. Add the flour and salt. Whisk until the batter is smooth. If you would like to add parsley or chives you can add them at this time. The batter should resemble a runny pancake batter.

Heat a little bit of oil in a skillet and ladle about ¼ cup of batter to the pan to resemble a crepe. Saute on medium heat until bubbles show on the top and the bottom is golden brown. Flip over and finish cooking until the second side is golden brown as well. Repeat until all the batter is used up. Let the fritatten cool a bit then roll each one jellyroll style and slice into thin strips.

 The Soup is usually served by adding some of the fritatten strips into individual soup bowls. Whichever broth you decide to use is then heated up and ladled over the strips.

  1. Never heard of this kind of Soup . Saw it and thought it was interesting. Decided to try it. This was surprisingly good. Will make again for sure.

  2. This recipes reminded me of home. I am from Germany and have always loved this Soup. I had no idea it was that easy to make. Thank you for sharing this recipe . It sure brought back some really good memories.
